Bran Muffins

3 eggs
1 cup white sugar
1 cup brown sugar
1 cup Three Farmers camelina oil
3tsp baking soda
3tsp baking powder
1/2 tsp salt
1tsp vanilla
3 cups whole wheat flour
3 cups wheat bran
1 3/4 cup milk
1 cup walnuts, crushed
Add eggs, white sugar, brown sugar, camelina oil, baking soda, baking powder, salt and vanilla in a mixing bowl. Mix on high until well blended. Add flour and milk alternately. Blend well. Add wheat bran and mix thoroughly. Beat until blended. Put in muffin pans and top with crushed walnuts.
Bake at 350 F for 30-35min.
Note: To test doneness, insert a toothpick to the center of the muffin, if it comes out clean it is done.
