Greek Salad

Ingredients – Salad

  • 1 head romaine lettuce, washed, cored and chopped
  • 1 long cucumber, unpeeled, seeded, and sliced ¼-inch thick
  • 1 red bell pepper, large diced
  • 1 yellow bell pepper, large diced
  • 1 pint cherry or grape tomatoes, halved
  • ½ red onion, sliced in half rounds
  • ½ cup feta cheese, diced or crumbled
  • ½ cup kalamata olives, pitted

Ingredients – Mediterranean Style Dressing (makes approximately 1 cup)

  • 1/3 cup balsamic vinegar
  • 2 tbsp dried oregano
  • 2 cloves of garlic (roughly chopped or smashed)
  • 1 tbsp dijon mustard
  • ¼ tsp sea salt
  • pepper to taste
  • 1 cup Three Farmers Camelina Oil (try the Roasted Onion and Basil flavour)


Combine vinegar, oregano, garlic, mustard, salt & pepper in either a blender or a bowl. Combine on high speed until blended well. Reduce speed to low and slowly add camelina oil until dressing is completely emulsified. Adjust seasoning and enjoy over your salad ingredients!

TIP: This recipe is also a great marinade for chicken kebobs!
