Socco Salad

  • 1 avocado, chopped
  • 1 roma tomato, chopped
  • ¼ cup corn (can also add shrimp to this) roasted in Three Farmers Roasted Garlic and Chili Camelina Oil and a dash of cayenne pepper
  • ¼ cup canned black beans
  • 1 tsp. minced garlic
  • dash of cumin
  • ½ cup quinoa


Cook the quinoa in chicken broth according to package directions. Combine all the ingredients into a bowl.

Drizzle Three Farmers Roasted Garlic and Chili Camelina Oil over mixture. Dress with chopped chives and cilantro.

Top with a couple drops of Siracha sauce and fresh lime juice. Enjoy!
